The layout of Safran allows one to have a view of the kitchen and one can watch as Chef Ramesh Bundi expertly and with fluid movement creates your masterpiece choice of food. The tandoor oven which is a standard at any Indian restaurant is only as good at the chef and this hails true as Bundi slips three pieces of dough and within a few minutes three types of Indian breads for your ‘naan’ – bread basket with distinct tastes of the varied Indian states emerges; cheese and onion, peshawari and the garlic & coriander.
Each dish is explained which gave our palates the thrilling temptation to experience the spell of Le Touessrok’s Safran. For the main course I indulged in the Mangalorean style prawn curry poached in spiced coconut milk and chilli aromatic coconut rice. This dish is representative of the cuisine that you would find in Karnataka. Mangalorean cuisine is well known for their distinct flavor. In general, the Mangalorean recipes are quite spicy and fresh coconut is an integral part of these recipes.
Any fine dining affair is not complete without entertainment and accompanying the sitar musician was fusion music with a distinct European appeal that had our aural experience completed with the Indian experience of Chef Ramesh Bundi’s Safran.
